In 1800, Ephraim Connor settled in the area that would become Collinsville, making him the first American settler of what would become Madison County.((<a href=\"https:\/\/archive.org\/stream\/historyofmadison00brin#page\/453\/mode\/2up\" target=\"_blank\" rel=\"noopener noreferrer\"><em>History of Madison County, Illinois, Illustrated. Collinsville was officially incorporated February 15, 1855,((Flagg, James S., editor,\u00a0<em><a href=\"https:\/\/archive.org\/stream\/our150years1812100flag#page\/60\/mode\/2up\" target=\"_blank\" rel=\"noopener noreferrer\">Our 150 Years, 1812-1962<\/a><\/em>. (Edwardsville: East 10 Publishing, 1962.), 61.)) and by 1880 the population of Collinsville reached 2,887 inhabitants.((<a href=\"https:\/\/census.gov\/library\/publications\/1883\/dec\/vol-01-population.html\" target=\"_blank\" rel=\"noopener noreferrer\"><em>Statistics of the Population of the United States at the Tenth Census<\/em><\/a>\u00a0(Washington: Government Printing Office, 1883), 139.)) Collinsville is home to the world\u2019s largest ketchup bottle and is the world\u2019s horseradish capital.
